Honest, it is a never-fail and very moist. And, it freezes nicely….except that it is a perfect color for the Christmas dinner.

2-3/4 cups Cake Flour
1 tsp. Baking Soda
2-1/4 cups Sugar
3 Eggs
1-1/4 cups Crisco
1-1/2 cups Buttermilk
1 tsp. Vanilla
1 oz. Red Food Coloring (Kroger brand)

Preheat oven to 325 degrees
Grease and flour 3 cake pans

Put ingredients in mixer bowl in order they appear. Mix until blended but do not overbeat. Bake for approximately 25 minutes.

Frosting
1 8-oz. pkg. Cream Cheese, softened
1 stock Butter, softened
1 box 4-X Sugar
1 tsp. Vanilla
1 cup Chopped Nuts

Gracious, Tori, I didn’t mean to turn this into a Cake Baking Session. But maybe someone will send you a cake. Might be Linda,if she has everything screwed in by now.

I didn’t have anything interesting to read! Forget all those new people—–you have a responsibility now to entertain us folks who come here regularly and have no life…….or we have a life, but we don’t like it.

While waiting for you to get over that case of “performance anxiety”, I busied myself by going around the house and making sure all the light bulbs were screwed in properly. That was fulfilling. I tried to balance my checkbook——heavy emphasis on “tried”. Settled for “close enough”. I went through my fridge checking expiration dates, and if it was expired, I ate it immediately. (Did you know ice cream has an expiration date? Goody!) I’m so glad you finally got your groove back on——-next, I was going to alphabetize all my spices! Whew!

Tori, you KNOW you would have to try really really hard to be boring or write boring stuff, and you’d probably fail at it anyway! So, next time you feel any “performance anxiety” coming on, suck it up and post something…..anything…..your fans are awaitin’!

The Lord is teaching me that He is keenly aware of EVERY aspect of my life and that He cares even about the small things. I had a major cooking day this weekend and ended up with an overabundance of apples. My thought was that I could make apple cake, but realized that in a de-cluttering frenzy I had gotten rid of the one recipe book that held the directions. But now, thanks to you and Momma Lloyd, I’ll be using up those apples in no time!
(side note- why, in a world that needs so many BIG things would God care whether or not one tiny little insignificant woman had a recipe for a cake? I don’t have any idea. I just know that He loves me and He keeps showing me in the little things.)

Alex, Happy Birthday…..best I can do since the whole one went to “my” Russ, Betty ate half of one that was left, and Beth would be upset if you ate cake and she didn’t.

But, here’s the recipe:

1–1/2 cups Wesson Oil
2 tsp. Vanilla
2 cups Sugar
2 Eggs
3 cups Flour
1 tsp. Cinnamon
1 tsp. Baking Soda
4 cups chopped Apples
1 cup chopped Walnuts
1/2 cup Raisens

Preheat oven to 350 degrees

Mix together vegetable oil, vanilla, sugar and eggs. Beat until well mixed. Then add flour, baking soda, cinnamon and mix well. Add chopped apples, walnuts and raisens. Bake for 1-1/2 hours in a well greased and well floured tube pan.

There you go folks….and the Taffs will be gracious enough to receive any you send their way. Oh heck, an’t you see their littlesmiling upturned faces? (yep, they have them, too)

Now, I did not get a whole one, I only got half of one. And before Momma Lloyd gets all cutsie and tells you I ate a WHOLE HALF OF FRESH APPLE CAKE WHILE I WAS AT HER HOUSE, I am going to admit that to be true. I also want to point out that I was there for 10 days, and that is not a lot of cake to eat in 10 days.

Now I have gotta go change my shirt, as I have drooled all down the front of mine, just looking at the pictures and remembering.
